Photographer Dwight Eschliman and science writer Steve Ettlinger decided to do something about this knowledge gap. In the book Ingredients they have focused on the 75 most common food additives and 25 normal food products that often contain one or more of the 75 additives. Together they explore each additive, what does it look like, where does it come from, how is it used and why?
In the book they take a closer look at goodies like acesulfame potassium, xanthan gum, sweeteners, thickeners and more. They also investigare 25 products common to most people and check out what is really in them. Here Dwight Eschliman have done some great photography work and carefully arranged every single ingredient in a very organized way. No matter you opinion on additives anyone have to agree that these photos look cool.
