Sometimes there is no need to complicate things, watermelon taste great, Greek feta cheese taste great, mint taste great. Why not simply combine these three ingredients and make some watermelon and feta cheese tapas bites. Try them.

Now this time I haven’t added any measurements for the ingredients. Just look at the pictures. Cut the watermelon in bite size pieces, then cut the feta cheese in a bit smaller pieces and add some mint, black pepper and olive oil.
Now there is a reason for not using the same amount of cheese and watermelon. The feta cheese is much richer in taste so a ratio of two parts watermelon to one part feta cheese works perfectly. And you don’t have to serve this as tapas bites if you don’t want to.
Just chop up some watermelon and crumble some feta cheese and toss with mint, olive oil and black pepper and you’ll have a fresh and great salad that goes perfectly as a side for grilled meat.
